Pumpkin Muffins

1 1/2 cup bean or rice flour blend
1/2 cup brown sugar
2 tsp baking powder
1 tsp cinnamon
1/2 tsp xanthan gum
1/4 tsp salt
1/4 cup butter, melted
2 eggs
1/2 cup milk
1 cup canned pumpkin
1/2 cup raisins or chocolate chips (opt.)
  1. Combine gluten-free flour mix, brown sugar, baking powder, cinnamon, xanthan gum, and salt. 
  2. In a large bowl, combine melted butter, eggs, pumpkin, and milk.  Add in dry ingredients.  Stir in raisins or chocolate chips if desired.
  3. Spoon into oil sprayed muffin pan. Bake at 350 degrees for 40 minutes or until a toothpick inserted in the center comes out clean.
Makes 12 muffins.
