Pea and Ham Soup

2 cups dry split peas
8 cups water
1 cup chopped onion
1 cup chopped ham pieces or meaty ham bone
1 tsp salt
1/4 tsp pepper

Combine all ingredients in a large soup
pot.

Bring
to a boil. Reduce heat and simmer for 2 hours.

For a thicker soup, mix 2 T cornstarch with 1/4 cup cold water, and stir into soup.
Makes about 3 quarts. |
