Taco Soup

1 pound ground beef
1/2 cup diced onion
1 (15 ounce) can diced tomatoes 
1 (8 ounce) can tomato sauce
1 (15 ounce) can red beans, rinsed and drained
1 (17 ounce) can whole kernel corn, with liquid
1 package taco seasoning 

(start with 1 Tbsp or less taco seasoning, then add more if needed)

  1. Brown beef and onion in a frying pan.  Drain grease.  Put in a large pot.
  2. Add remaining ingredients.  Bring to a boil.  Reduce heat and simmer for 20 minutes.
  3. Ladle soup in bowls. Top each bowl with a handful of crushed tortilla chips and a sprinkle of shredded cheese, if desired.

Note: Substitute 1 Tbsp chili powder, 1 Tbsp cumin powder, 1 Tbsp onion powder, 3/4 tsp garlic powder and 3/4 tsp salt for one package of taco seasoning.
